I had a request for a recipe! I feel so special! Thanks to the awesome mama who messaged me about it and here you go!!!
Amazing Paleo Vanilla Almond Granola (Originally from Against All Grain by Danielle Walker)
1 cup Raw Almonds
1 cup Raw Walnuts
1/2 cup Raw Pecan Halves
1/2 cup Raw Cashews
1/4 cup Raw Sunflower Seeds
1 3/4 tsp salt
3/4 cup grade B maple syrup
2 tbs coconut oil
1 1/2 tbs pure vanilla extract
1 tbs cinnamon
1/2 cup shredded unsweetened coconut
2/3 cup raisins
Preheat oven to 170F (My oven’s lowest temp is 200F so I just leave it there)
Place all nuts and seeds in bowl with 1 tsp salt and cover with water. Let soak for 24 hours (dont worry the cashews will look NASTY after this— ignore)
Drain nuts and seeds and dry on paper / dish towels. Transfer to food processor and process until nuts are the size of BIG oats (ie don’t over process). Add melted coconut oil, maple syrup, vanilla, cinnamon, and remaining salt. Gently pulse until combined.
Pour mixture into a bowl and stir in coconut with a spoon. Line 2 large baking sheets with parchment paper and spread mixture evenly into thin layers.
Put trays in oven and use a wooden spoon to keep the oven door open a crack to let the moisture out (watch out for curious babies here obviously). Bake for two hours, remove and stir/flip granola and put back in the oven for a thrid hour. Then, turn oven off, close door completely and let dry for a 4th hour. Remove from oven and stir in raisins.
Enjoy/Scarf as a snack, or in a bowl with unsweetened almond milk.
